Why Are You Supposed to Refrain From Eating 2–3 Hours Before Class?

One is advised not to eat for about 3 hours before the yoga session because the last meal is still being digested for those hours - kriyas & asanas are best done on an empty stomach.

The undigested food in stomach may harm your system while performing straneous asanas. So relatively empty stomach, empty bowels is a must.
