How is the IELTS listening section marked if I missed a word? For example, if I wrote cattle?? instead of young cattle or missed the?

It depends on the question. If the content word is cattle only, there is nothing to worry. But if the answer is specifically young cattle, you stand to lose. However, it is not very important in listening.

Yes if young cattle was required and you wrote just cattle and if "young" is mandatory then, of course, you will get it wrong.
