There are different Guitars for Different purposes. Stratocaster Style body Offers you single coil pickups and the tone of the guitar is thin which give us more clarity but less of sustain on the guitar as compared to les pauls style body. On the other hand, les paul style guitars are thick in size and are mostlyequipped with humbuckers (double coil) which gives you more sustain and warmer tones and little less clarity.Both are very capable guitars for varied purposes. 2.One more thing, why people have more than one guitar is for recording purposes generally. Recording the same guitar part on the same guitar gets your sound very clustered in the frequency range, so people use different guitars for recording for seperation in the mix. Because, In an orchestra there should be a lead guitarist,chord guitarist and bass guitarist innorder to add beauty to the music by harmonising. Usually guitarist may have use one guitar considering an orchestra there should be one or two extra guitar for lead and chord
