What methods, materials, and tips would you suggest for a student to increase their GRE quant score on a retake from 161 (78th %) to 165+ in 1 week, after taking a break from studying for 2 months?

A high score in Quant is all about practice. There is a lot of material available online which can be used for practice. The more you do so, the better you become.
