There are two things making guitar playing a challenge for your fingers. First, you will experience sore fingers, especially at the start, when you play the guitar. The pain might make you feel like giving up, but try to stick through it, as it will get easier after time.

Old strings (dead strings) tend to be more stable and consistent in tone. Though eventually they do get played out and won't stay in tune and lose tone. Some prefer the sound (even seasoned pros).

Yes , but only the 4th 5th and 6th string If you don't loose this string then your neck could be bend dur to its pressure
