As a geographer and environmentalist, I have had multiple opportunities to involve students in research that addresses human-environment interactions through vigorous, science-grounded programs. In the areas of GIS, Remote Sensing, and Environmental Studies an instructor has the advantage of being (at least partly) able to tailor his/her classes to the needs of students. I would love to advise students and teach courses in spatial technology, natural resources, or a combination of the two.
In order to get my students interested in the subject matter, I convey my own enthusiasm by talking about my research and other work I am doing related to the topics covered in class. This can help students see how theoretical concepts can actually be applied to real-world problems.
