Freezing point is around 10-15 degrees

Coconut oil is solid in North Indian winters (15-25 C) but liquid when air temperature is 35C or so in summers. All vegetable oils can be converted to fats artificially by hydrogenation also called saturation (with hydrogen). More the saturation higher is the melting point of a lipid (oil/fat).
