when green vegetables are kept in refrigirator for a longer period the freshness and some of the nutrients present gets evaporated and the vegetables seems to be dry and unnutritional...so these vegetables has to be put in water and to kept in a mud pot... so that you can have a fresh green vegetables...

depends upon the temprature, and the type of vegetable, more or less now a days even vegetable shops are air condoition to keep it fresh, but if one goes in luxury star hotel, they use it deeply refridged, nutritional value ofcourse go waist after a week time..
