it happens because of the displacement reaction between iron and copper sulphate. Iron displaces copper from the copper sulphate soln and form Iron sulphate. Hence, the color of copper sulphate fades out. Fe(s) + CuSO4 (aq) ---> FeSO4 (aq) + Cu (s)

Copper sulphate reacts with iron forming ferrous sulphate and therefore solution colour changes
Comments

When the iron nail dipped in the copper sulphate solution than iron displaces copper from the copper sulphate because iron is more reactive than copper. Therefore the color of the copper sulphate solution changes.
