Both are best Nikon and canon, go for basic camera as per your budget, basic knowledge should be needed for better start.

Should I use flash during day time while taking portraits ?

Yes you can use but not always, if there are hard light and it casts hard shadow on face than you can use external flash as a fill in light and lighten hard shadow as you need, also use creatively in day light and get better result.

I want to be a successful photographer. how should I start ?

good composition, proper camera handling and understanding of camera gears, artistic vision , under standing of light and shade in your frame, and all this will come out from practice of photography and from observation

Which professional camera is used for fashion photography?

You have to be creative, understand lighting properly, good camera will help for good output but not necessary for starting, it is understanding of lighting angles and camera control.
