These communication protocols help the processor/controller to either communicate with other devices like senors, other processors/controllers and also to write to other devices. For example CAN is a communication protocol widely used in autmotive sectors.
Each of these protocols have their own way of communicating or set of rules while communicating which will make the process of muoltiple devices communicate with one another easier.

ADC - converts the real-world (analog) signal to 8/16/32 bit digital signal represented by 1's and 0's because microcontroller operates only in digital domain. On the other hand once the necessary operation is complete, the processed digital data when sent out may not be useful to be understood by the real-world devices like a relay/speaker/bulbs, because they understand or operate on analog voltages, hence you need to convert these digital signals to analog which is done by DACs. They either have an inbuilt resistors in which case they output the volatage directly or you may have to connect load resistors to extract the voltage from a DAC.
