How do I connect two sensors to a single 8051 microcontroller at a time?

Interface an ADC (ADC0804 or 0808) to 8051 then connect the sensors to the input of ADC 0804 or 0808 that should do it for you. Periodically read it from the input port of 8051 to which the ADC is connected to.
