As per your question, your answer is, cellulose is important organic molecules because it's sturdy structure provides a wide variety of functions. It is the main component of a sturdy cell wall that surround plant cells and is what makes plant stems, leaves, and its branches. It also helps to make synthetic materials like in cotton fabric.
And your second question about main difference b/ w properties of cellulosic and non-cellulosic:
It is non-cellulosic when an organism in which cellulose is absent in its cell wall - non-cellulosic cell wall. The cellulose may be replaced in other components like pectins( d-galacturonic) and hemicellulose .this mainly found in marine algae.
Properties of cellulosic depend upon the degree of polymerization or chain length, and the number of glucose molecules constituting the polymer molecule.
