Why do recipes add salt at the end of cooking?

When you boil veggies or chickens add salt in the beginning. Because main ingredient absorb salt quickly while boiling period. After mixing gravy, salt is must to balance the gravy and main ingredients.

It is because adding salt in starting or in between will make recipes wateries...so it is always advisable to add salt in recipes at the end so that recipe gets its proper taste as well as proper formation and texture
