They do it because by playing with an stronger player u will get some ideas and experience towards chess

See if a player plays with weaker player he plays with better ideas than him/her but if plays with stronger player he gets stronger attack and while defending in such positions he gets to know his/her mistakes and by defending he/she also gets better in game and playing with those stronger players again...
