You can't get a real exposure over enterprise J2EE projects by learning online. However, you can learn all the collective things separately through many Youtube videos.
First, Learn how to set up the workspace environment for the project you are going to work on.
Second, Don't rush yourself. Try to master any one of the frameworks. If you are new, go for spring and ORM, learn to hibernate and useful things in sleep (L2 cache using Ehcache)
Third, Practice. Practice. Practice
At last, you will master one and start with another.
