Why in French do you use 'en' in a sentence like "j'en dors pas depuis 3 jours”?

C'est le pronom personnel qui remplacer COI ou COD.

En is pronoun which replaces de qui or de quoi. It also replaces source ( source destination). In your example, if you want to say, I do not sleep there since 3 days, then pronoun Y would be more appropriate instead of en.
