</p> <p>Why does dry HCl gas not change the colour of the dry litmus paper?

Dry HCL is not acidic to change the colour of blue litmus paper to red,there must be presence of acid. water is required for the dislocation of HCL into H+ and CL-, Therefore dry HCL gas is not acidic and will not change the colour of litmus paper.

</p> <div> <p>Oil and fat containing food items are flushed with nitrogen. Why?

In the presence of oxygen in the air the fats present in the fatty food are oxidised to the compound and have bed smell and the food become rancid but after flushing with nitrogen. Nitrogen acts as an antioxidant and it prevent them from being oxidised.
